What Makes This Curry restaurant-style paneer butter masala?
Restaurant-style paneer butter masala is known for its smooth tomato gravy, gentle sweetness, buttery richness, and soft cubes of paneer. The key is to cook the tomatoes and spices thoroughly, then blend the sauce until silky. A little cream rounds out the flavor, while kasuri methi adds the familiar aroma found in many North Indian restaurants.
For about four servings, prepare paneer, 3 tablespoons butter, 1 tablespoon oil, 3 roughly chopped tomatoes, 1 small onion, 12 cashews, 1 teaspoon ginger-garlic paste, 1 teaspoon Kashmiri chili powder, ½ teaspoon garam masala, ½ teaspoon cumin, 1 teaspoon sugar, ¼ cup cream, and salt. Keep water, chopped coriander, and crushed dried fenugreek leaves nearby.
Prepare the Smooth Gravy
Heat the oil and one tablespoon of butter in a pan. Add the onion and cook until translucent, not deeply browned. Stir in the ginger-garlic paste, then add tomatoes, cashews, chili powder, cumin, and a pinch of salt. Cook over medium heat for 10–12 minutes, stirring occasionally, until the tomatoes soften and the mixture looks glossy.
Let it cool slightly, then blend until completely smooth. For an especially refined texture, pass the mixture through a sieve. Return the gravy to the pan and add a little water to reach your preferred consistency. Simmer gently for five minutes, allowing the flavors to come together.
Finish and Serve
Cut the paneer into bite-size cubes for restaurant-style paneer butter masala. For a softer result, soak them in warm water for 10 minutes, then drain. Stir the remaining butter, sugar, garam masala, and crushed kasuri methi into the gravy. Add paneer and simmer gently for three to four minutes; avoid vigorous boiling, which can make the cheese firm.
Lower the heat and stir in the cream. Taste and adjust salt, sweetness, or chili. Finish with coriander and, if desired, a small swirl of cream. Serve hot with naan, roti, or basmati rice. For the best texture, add the paneer near the end and serve soon after cooking.
